Delicious traditional Carbonara in 20 minutes🍝

Ingredients
Oyster mushrooms
1 onion
2 - 4 cloves garlic
Butter
Salt
Crushed red pepper
800g Parmesan
3 egg yolks
Pasta (hold onto the water)
Optional, bacon or pancetta
Preparation
Step 1
Slice mushrooms, dice onions and mince the garlic cloves. Saute the onions and garlic in butter.
Step 2
Still on a high heat, add in the mushrooms and season with salt and crushed red pepper.
Make the sauce: mix the Parmesan, egg yolks and 1/2 cup pasta water.
Step 3
Once the mushrooms are borwning, toss in the cooked pasta (and cooked bacon/pancetta if wanted). Add in the sauce, quickly mix to prevent the eggs from scrambling. If the dish it looking dry, add in more pasta water to reach the desired consistency. Salt to taste.
Step 4
Serve with fresh Parmesan, parsley and cracked pepper.
