Ingredients
Shiitake mushrooms
Halloumi
Cherry tomatoes
Salt and pepper
Rosemary
Oil or butter
Bread
Preparation
Step 1
Wash and slice the shiitake mushrooms. Chop halloumi to the desired size (around a similar size to the mushroom slices).
Step 2
Warm the oil or butter on a medium heat pan. Add mushrooms and halloumi to the pan.
Step 3
Once the mushrooms begin to brown, season with salt, pepper and rosemary. (If you salt before they begin to brown, they will release all their water and may become rubbery).
Step 4
Once halloumi and mushrooms are cooked and golden, remove from pan.
Serve on bread or sourdough with chopped cherry tomatoes (optional: balsamic vinegar).
